This downhill itineraries are dotted with numerous points of interest that will help you to best appreciate the contrasts of this terroir, with countless panoramic views over Lake Geneva and its mountain backdrop along the way.
For millennia, Lavaux was an uncultivated hillside covered in trees and bushes. From the 12th century, at the instigation of the Lausanne bishops, Cistercian monks cleared the land and built walls to create terraces for the planting of vines. Many centuries on, this place has kept a remarkably similar appearance in terms of architecture, walls, textures and colours.
Numerous wine growers exploit this terroir, mainly producing white wine from the Chasselas grape, but a good number of other specialities besides. Whilst on this subject, you will find a list of some places on (or very near to) the itinerary, where it is possible to taste this nectar of the gods.
